Ethiopia is the birthplace of Arabica coffee, and every region grows it differently. Here is what we source from each.
Grown at 1,700–2,200m in the Gedeo Zone. Ethiopia's best-known specialty origin — floral, citrus and bergamot notes with a bright, tea-like body.
Neighbouring Yirgacheffe with similar altitude and climate. Lots range from bright and citrusy to fruit-forward and winey, across a full range of grades.
South of Sidama, bordering Borena. Often naturally processed with a syrupy body, and notes of tropical fruit, red berry and wine.
Eastern Ethiopia, one of the country's oldest export origins. Longberry variety, dry-processed, with a wild, wine-like character and blueberry notes.
Southwest of Jimma. Balanced acidity and body with a winey, spice-toned cup — a dependable middle ground between bright and heavy origins.
One of Ethiopia's largest coffee zones by volume. Mostly commercial grades with earthy, spicy character, alongside a growing share of washed specialty lots.
Widely regarded as the origin of Arabica coffee itself. Forest and semi-forest coffee grown with minimal cultivation, producing distinctive heirloom character.
Western Ethiopia, historically natural-processed. Fruity and wine-like, and increasingly sought after for specialty-grade lots in recent years.
All lots are graded under Ethiopia's national coffee grading system, from Grade 1 (highest, lowest defect count, specialty) through Grade 5 (commercial). We can source and blend to whichever grade and flavor profile your roastery or import program needs.
“AYO Coffee exists to move green coffee from Ethiopia's farms to the world's roasters without losing what makes each region distinct — the origin, the process, the grade.”

The same four stages, for every lot we export.
Cherry and parchment sourced directly from partner farmers and cooperative unions in each region.
Washed or natural processing, then grading from Grade 1 specialty through Grade 5 commercial.
Sample cupping and moisture/defect testing before a lot is confirmed for export.
Documentation, customs clearance and shipment from Djibouti or Addis Ababa.
Consistent grading lot after lot, and paperwork that's always ready before the vessel is. That reliability is rare.
Their Guji naturals have been some of the cleanest lots we've cupped from that region in the past two harvests.
